Spiralled Whipped Cream

Red fruity trails in whipped cream – a feast for your senses. Try it and you’ll bring the house down. I took some raspberry juice, thickened it with some corn starch and filled it an a pastry bag with an icing syringe. Therefore draw three lines along the inside of the bag and then fill in whipped cream as usual. You may pipe single spots or stripes having fruit jelly at three points. Cupcakes should be decorated with a rose piped with a star tip beginning at the edge and turning to the middle of the top.
If you don’t have an icing syringe you can fill in the jelly with a long-stemmed spoon. The most important thing is that the stripes don’t touch.

Spring is all around – declicious chocolate cupcakes and hazelnut cookies savoured while the sun is shining.
Instructions for twisted raspberry cream and easy-peasy napkinfolding will follow tomorrow.

Cauliflower Casserole

Blumenkohl5Time for cauliflower is up but deep-frozen you can savour it the whole year through. Our kids often ask for it when they come home. Cauliflower on a yeast dough baked with cheese. If you don’t have time or don’t dare to make the dough yourself you may take a convenience product as well. The 11″ springform tin and a salad accompanying it will make 4  lunch dishes. If you need less you can deep-freeze the remainders very well and eat them lateron lightly warmed up.

Unfortunately I can’t offer my recipe card today because the plugin’s not working.

Ingredients:
Convenience dough or 1/2 recipe of pizza dough (see here)
1 cauliflower or 1 package deep-frozen cauliflower
7oz boiled ham
1 egg
7oz sour cream or crème fraîch
2tbsp corn starch
3oz ground Emmenthal cheese

Directions:
Greas springform tin
Preheat oven at 390°F

Prepare dough according to instructions on package or prepare 1/2 a recipe for pizza dough. Unroll and give into an 11″ springform tin lifting the edge.
Wash cauliflower and break into small florets. Cook in salted water for about 5-10 minutes. Cut boiled ham and add to florets with egg, sour cream and corn starch. Flavour with pepper and salt. Pour over dough and sprinkle with cheese. Bake in pre-heated oven at 390°F for 35-40 minutes. Remove from oven and cut into quarters and serve with lettuce.

Remarks:
Cut into pieslices you will have a good portion for dinner.

Rose Crumble

Finally I found the time to try one more of the wonderful recipes with rose ladyfingers. Last week I bought some deep-frozen rhubarb and therefore wanted to try a crumble with it. A crumble is both creamy and crunchy and you can savour it lukewarm or cold. The recipe is made for 8 ramekins. It’s a fast job and they’re delicious!

Ingredients
  1. 4.2oz rose ladyfingers (standard ladyfingers will do as well)
  2. 0.7oz powdered sugar
  3. 2.1oz wheat flour
  4. 2.8oz cold butter
  5. 6 stalks of rhubarb or 6 handful of frozen rhubarb
  6. 6 tbsp strawberry jam or redcurrent jelly
Instructions
  1. Unfreeze rhubarb for at least one hour or
  2. wash stalks and cut into dices without peeling.
  3. Preheat oven at 350°F.
  4. Grind ladyfingers carefully. Mix them with powdered sugar and flour in a large bowl. Add cold butter cut into small flakes and work with your hands to get a crumbly texture. Tip rhubarb into the ramekins, cover with jam or jelly and sprinkle over the crumble mixture. Bake for 30 minutes until the top is golden. Serve warm or cold.
Notes
  1. I served it with a mixture of 3.5oz yogurt, 3.5oz crème fraîche, 1tsp granulated sugar, 1 tbsp desiccated coconut.
