Salad with asparagus

When buying fresh fruit or vegetables my eyes are often bigger then my tum and I had left half a bunch of green asparagus. What do you do with them if you don’t like to eat the same thing twice? Well then you’ll rummage in the web for a fitting recipe like the one of the potato salad with asparagus. I only did half of the recipe and made it with green instead of white asparagus. Furtheron I added some fresh mushrooms because I had to take aside one portion without tomatoes for my beloved housemate.

Ingredients
  1. salad
  2. about 7oz small potatoes
  3. 2lb green or white asparagus
  4. salt, 1/2 tsp sugar, 1tbsp butter
  5. 1 bunch of garden radish
  6. 7 oz of small tomatoes
  7. 7oz mushrooms
  8. 1 bunch of scallions
  9. dressing
  10. 8 tbsp cooking oil (walnut oil)
  11. 5 tbsp herbs vinegar , ½ tsp mustard, salt, freshly ground pepper,1 pinch of sugar
Instructions
  1. Wash potatoes, cook in water, peel, cool and cut into slices.
  2. Blanch asparagus in boiling water with salt, sugar and butter until tender.
  3. Clean radish, tomatoes, mushrooms and scallions and cut into slices or rings. Give all ingredients in a large bowl and mix carefully.
  4. For your dressing stir oil, vinegar, mustard, salt, pepper and sugar. Sprinkle over vegetables. Brew salad for 10-15 minutes and turn vegetables in dressing again.

Surprise strawberry

This is a very special one. We guarantee it’s not genetically modified and surely pesticide-free. Its content however, two little sweet chocolate pralines, is rather rich in calories. A lovely little gift for a tea time invitation or as an attachment to a larger present.
You’ll need red and green cardstock, a green ribbon, scissors, pencil, a brown and a yellow pencil, ruler and a hole-punch.
Draw strawberry on red cardstock, cut out, draw the typical strawberry spots, fold along the drawn lines and punch as marked. Tear ribbon through every hole, fill strawberry with chocolate or other candies and carefully tighten the ribbon. Draw leaf twice on green (or differently colored) cardstock and punch in the middle. Pull ribbon through both leaves and tie a bow.
This strawberry will please even those usually being allergic to them.

Heart shaped bag

Hearts, hearts and still more hearts. A nice bag just designed for beeing placed on Mother’s Day tables. Fill it with some marshmallow hearts and Mum will be thrilled. Alternately it can be decorated with some small flowers placed in a schnapps glass watering them. If you want to to something more buy some small cosmetics and fill the bag with them.
Download the samples here. I chose red cardstock mesuring 7 x 5.5 inches because it fits well with my already existing decoration for Mother’s Day. Fold both long sides at 1.5″ and make an 0.5″ fold on each side of their center line. Cut out the smal rectangles in the middle of the 1.5″ edges. All corners need to be rounded off. Then put some glue on the inner side of both right flaps just beside the cut out piece. Now fold right flaps over the left ones so that you’ll get a heart shaped bag. It will have a bottom of 1 inch to stand on. I placed a further big heart in matching colors on top of the laps and a small on on the handle which is 6-7 inches long and 0.5 inches wide and glued to the inside of the laps.
Now you just have to find the appropriate filling. Besides Mother’s Day it’s also a wonderful gift for a wedding anniversary.

Mother’s Day

Just a week left to organize a lovely table setting for Mother’s Day which will be celebrated on May 11th this year. For all those who want to prepare something with or without kids I’ll show you a foolproof decoration. You won’t find any mother not being happy with this wonderful table setting made by her kids. I chose red and white as my favourite colors but you may take any other color you or your mother likes. In the middle we have a garland with little hearts that are glued to a small ribbon with double sided adhesive tape. These small hearts can be made even by the youngest kids if Daddy will draw them. The others will surely prefer to draw and cut by themselves. Even the napkins are folded like a heart and you’ll find the instruction here. For the flower embellishing Mum’s place you need 6-8 stripes 8″ long and 1/2″ wide. The stalk also is 8″ long and 1/2″ wide and for the leaf I took one of those stripes and rounded it off a little bit. Fold each end of the 6 stripes to one side for 1/2″ and give some glue on one of these ends. Then place the second end on top and you will have the first petal. Having done this with all six stripes these are glued together at their pointed end. Now glue the leaf to the flower’s stalk and place the stalk between two petals. Fix with some glue too.
For the centerpiece you may take some unostentatious flowers like daisies or lilies of the valley gathered in the garden by your kids. Place them in plain glasses, twist a funny ribbon around and here you are with a nice centerpiece.
The table setting alone is a gorgeous gift and it surely was a pleasure for all who helped preparing it.

Sandwich with strawberries

Strawberries – once again, you’ll probably say. But I think that time for enjoyement of these wonderful fruit is far too short for those really loving them. That’s why for now I’m having them nearly every day either prepared as a sweet dessert or cake or even hidden in a traditional sandwich. The recipe for one of them you’ll get right now.

Ingredients
  1. 8 slices of whole-wheat sandwich bread
  2. 8 Scheiben Vollkorntoastbrot
  3. 2 chicken breast filets
  4. 7oz cream cheese
  5. salt, freshly ground pepper, 1-2 tbsp milk
  6. 10-12 chopped fresh basil leaves
  7. 3.5oz rocket
  8. 3.5-4oz fresh strawberries
Instructions
  1. Clean strawberries, rocket and basil leaves. Chop leaves and cut strawberries into thin slices.
  2. Clean chicken breast and rost in a frying pan with heated oil until golden brown. Season with salt and freshly ground pepper. Put aside to cool down and cut into thin slices too.
  3. Mix together cream cheese with salt, pepper and 1-2 tbsps of milk. Fold in basil leaves carefully.
  4. Toast bread on both sides and spread cheese on one side. Then alternately layer with strawberry slices, chicken breast and rocket. Finally place the second slice of bread on top.
  5. Cut diagonally and serve on a large plate.
Notes
  1. Instead of freshly ground pepper I took some left over pepper chees and mixed it with the cream cheese. Good taste too and helps using remainders.
