Salad with asparagus
When buying fresh fruit or vegetables my eyes are often bigger then my tum and I had left half a bunch of green asparagus. What do you do with them if you don’t like to eat the same thing twice? Well then you’ll rummage in the web for a fitting recipe like the one of the potato salad with asparagus. I only did half of the recipe and made it with green instead of white asparagus. Furtheron I added some fresh mushrooms because I had to take aside one portion without tomatoes for my beloved housemate.

Ingredients
- salad
- about 7oz small potatoes
- 2lb green or white asparagus
- salt, 1/2 tsp sugar, 1tbsp butter
- 1 bunch of garden radish
- 7 oz of small tomatoes
- 7oz mushrooms
- 1 bunch of scallions
- dressing
- 8 tbsp cooking oil (walnut oil)
- 5 tbsp herbs vinegar , ½ tsp mustard, salt, freshly ground pepper,1 pinch of sugar
Instructions
- Wash potatoes, cook in water, peel, cool and cut into slices.
- Blanch asparagus in boiling water with salt, sugar and butter until tender.
- Clean radish, tomatoes, mushrooms and scallions and cut into slices or rings. Give all ingredients in a large bowl and mix carefully.
- For your dressing stir oil, vinegar, mustard, salt, pepper and sugar. Sprinkle over vegetables. Brew salad for 10-15 minutes and turn vegetables in dressing again.
