That&#8217;s why I simply changed the recipe and took some persimmon instead. Thanks to the scampi it&#8217;s a very classy but light appetizer. It&#8217;s easy to prepare it and it&#8217;s lovely for New Year&#8217;s Eve.<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\nfour servings<\/p>\n<p>200graw scampi without head (fresh or frozen)<br \/>\n1 tbsp cooking oil, a dash of salt and sugar<br \/>\n1\/2 cucumber<br \/>\n1 big or 2 small persimmon<br \/>\njuice of 1 lime<br \/>\n1 bunch of chive<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Heat scampi (unfreeze if necessary) with some oil in a cooking pan and roast scampi 2-3 minutes turning them regularly. Season with salt, cool and chop coarsely.<\/p>\n<p><a href=\"http:\/\/www.bastelesel.de\/scampi-vorspeise\/scampi2\/\" rel=\"attachment wp-att-7171\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full wp-image-7171\" src=\"http:\/\/www.bastelesel.de\/wp-content\/uploads\/2015\/12\/Scampi2.png\" alt=\"Scampi2\" height=\"240\" width=\"600\" srcset=\"https:\/\/www.bastelesel.de\/wp-content\/uploads\/2015\/12\/Scampi2.png 600w, https:\/\/www.bastelesel.de\/wp-content\/uploads\/2015\/12\/Scampi2-400x160.png 400w\" sizes=\"(max-width: 600px) 100vw, 600px\" \/><\/a><\/p>\n<p>Peel cucumber, core them and dicce. Peel persimmon, cut off leaves and take off the inner hard parts. Take half a persimmon and cut into small dices. Chop carsely remaining fruit and pur\u00e9e with lime juice. Season with a dash of sugar and salt, add chive rolls.<br \/>\nDivide fruit dice on small party glasses and add cucumber. Baste with some dressing. Then pour in the chopped scampi and the remaining dressing.
